Comparison of Fatty Acid Composition of Red Grape Seeds (Vitis vinifera L. cvs. Öküzgözü and Boğazkere)

This study was planned to determine the quality criteria of core oils Öküzgözü and Boğazkere grape varieties grown in Elazig region, compare them terms oil amount fatty acid levels. Grape seeds are rich unsaturated acids phenolic content. Therefore, iruse is increasing, especially obtaining cook goil. carried out on Boğazkere, two black grapes locally. These generally used as wine grapes. The interest evaluation beans, which by-products production, has been increasing recently. Amounts defined vary according varieties. In differences between groups, p<0.05, p<0.01 p<0.001 values were used.
